JC Cooks: Spicy Mexican Black Bean Soup!

I have got a treat for you today! Now the weather is getting a bit cooler, I thought it was time to get back into making some soups. I do love our staple sweet potato soup, but I thought it was time to mix it up and wanted to try something with a bit of mexican flavour – so I settled on spicy Mexican black bean soup!

If you haven’t tried to make your own soups at home then I highly recommend it. The soups from the supermarket just cannot match how delicious home made soup is in comparison. If you don’t have a blender then I picked up a stick blender from Argos for less than¬†¬£20 and it has lasted an age. I think soup is an ideal dinner as they are usually quite low in calories, packed full of vegetables and always keep me full.

This soup in particular does an amazing job of keeping you fuller for longer. I’m quite obsessed with Jamie Olivers superfoods at the moment and learnt that the black bean has the most protein out of any type of bean (new fact for you there!). It is ideal for that long slow energy release along with a whole lot of fibre. This version makes 4 servings and it lasts around 3 days in the fridge. I usually make a full batch and then we have it for dinner a couple of days in a row.
